Halfwit Single Origin Round Two! Here is the second new Single Origin from Halfwit Coffee, Honduras Finca La Mora. This is a "Red Honey Processed" coffee. Honey processing is a technique in which the outer skin is depulped and removed from the bean, but the honey-like mucilage (ordinarily removed in a "washed" process) is left on the bean during the drying process. There are a few different types of honey processing, broken into sub-categories by color, yellow, white, gold black, and red. Red honey uses extra shade to slow down the drying process which exposes it to additional humidity and fermentation and results in sweeter and wilder flavors in the cup. Needless to say I am eager to start the dialing in process.
