Rabbit Hole Roasters is located in Montreal Quebec Canada. Their core coffee region is the Yunnan Province in China, supplied by their import partner, Yunnan Coffee Traders. Yunnan Coffee Traders (YCT) is completely foreign owned. They are an originator of the specialty coffee industry in the Yunnan Province. Specifically located in Meglien county, where they operate farms, a mill, research, and training facilities.
Rabbit Hole Roasted is very excited to part of this journey and has committed to partner with YCT for years to come, which is not something most roasters do. Together they are already planning very interesting projects for this next upcoming harvest!
TEST RESULTS
This is my first time testing a coffee from China, so I was very interested to see how it tasted. I have heard nothing but amazing reviews coming from everyone who has tried Rabbit Hole Roasters, including my buddy @mtlespressolove who was kind enough to send me this coffee to test. As soon as I opened the bag an intense smell of almonds wafted in my face. I love nutty tasting coffees, so this instantly peaked my interest. I decided to use a VST filter basket to intensify the acidity, and brighter notes. Upon filling my filter basket with fresh grounds, notes of almond, citrus, and a light cherry scent began to fill the room. By the time I finished pulling a shot I was extremely eager to taste it. I stirred my freshly extracted espresso, and breathed in deeply, fully taking in the smell. The aromatics are off the charts! I take my first sip....and all of the scents transform in full force. It has a deep complex nutty almond flavor with a hint of cherry, that tastes like amaretto. It follows with a very delicate and light chocolate flavor that is creamy and buttery more like white chocolate. Finally crisp citrus notes close it out on the finish. Almost immediately after taking my first sip I take note of the unique texture and mouthfeel. It's a very thin espresso with little to no crema. Instead it coats your mouth as a clarified butter, or an MCT oil would. I think this oil like consistency may be the reason for the elevated aromas. I really enjoyed this unique coffee, and I have nearly finished off the entire bag in just a couple days! This coffee draws you in, and keeps you coming back for more. I can also say that it's just equally magical as a pour over (both V60 and Chemex).
