TEST RESULTS

This is my first time trying anything from City of Saints and I gotta say that the flavor profile and bag artwork definitely caught my eye. What I didn't notice at first was the large number of varietals this coffee contains...six, WOW! This coffee was very tricky to get dialed in for espresso and get the flavor profiles to shine through. It took quite a bit of trial and error, and some flow profiling wizardry to find the sweet spot. However, it comes through nicely as a pour over, specifically with the Kalita Wave 185. The wild cherry and apple juice come through first, very clean, crisp, and bright. Then followed by what reminds me of a shortbread cookie taste. The subtle sweetness from the cookie flavor helps balance out the tartness from the fruits.

PRESSURE PROFILING NOTES

Breville Dual Boiler 920XL "Slayer Mod"

  • Valve cracked open about 1mm - 1.5mm

  • 0 bars to 3 bars in 20 seconds

  • Close valve a little as coffee starts to bead out

  • Hold between 3 to 4 bars for first 10 - 15 seconds of the shot

  • Slowly open the valve and build up to 9 bars

  • Around the 30 second mark, close the valve slightly to compensate for puck erosion to about 8.5 bars

  • Close valve as shot time reaches about 40 seconds, and weight is about 30 grams
