Review and Extraction of another amazing single origin coffee from Halfwit Coffee

FARMER HIGHLIGHT


Finca Rosario de Fátima is owned and operated by the Sterkel family. The Sterkel family originally immigrated from Germany in the 1700's. It's located in the mountainous Cobán region which has a unique micro-climate that is perfect for coffee.

Leaf Rust is a plant disease that has affected many of the farms in that area. The Sterkels refined their cultivation techniques, and increased the spacing between their crops to prevent contamination from any affected plants. This forward thinking and determination has resulted in the Sterkel family producing some of the finest coffees in the country! The end result is a washed hybrid of Caturra, Catuai, and Bourbon that is bursting with Mandarin acidity and sweet notes of brown sugar.


TEST RESULTS


Knowing that this is a citrus forward Guatemalan, I decided to use an IMS filter basket to help balance out the acidity and pull out some additional sweetness. The IMS definitely produced the intended outcome. This coffee has a wonderful rich and deep sweetness that you would expect from a Guatemalan. The brown sugar really pushes through nicely, and has more of a dark brown sugar taste to it that I LOVE! The Mandarin Orange blends perfectly with the chocolate undertones and creates that classic Terry's Chocolate Orange Slices taste. The nectarine notes are very subtle and occasionally morph into a full blown peach flavor from time to time. Overall another big win from Halfwit Coffee!
